The Valdivia winery is a new sherry and brandy winery in Jerez de la Frontera in Andalucía. It was started five years ago and boasts the finest aged oak barrels for the Solera system in Jerez. There are 5000 oak barrels of excellent brandies.
Bodegas Valdivia Suite comprises two lines of sherries: one the Valdivia and the other the 15 year old Sacromonte sherries and PX wines. The Gran Reserva brandies are Pedro de Valdivia and Duque de Valdivia. All with important international wine awards.
Each sherry is authentic in character, very intense to the nose, and clearly true to its class.These wines are positioned in the top band of quality and their length of time maturing is in most cases above the average.
The packaging is modern and easily identifies each individual sherry: Manzanilla,Very Dry Fino, Dry Amontillado, Dry Medium, Dry Oloroso, Sweet Pale Crea, Sweet Cream , and Very Sweet Pedro Ximenez.
The Sacromonte line consists of Dry 15 yr Amontillado, Dry 15 yr Oloroso, Very Sweet 15 yr Pedro Ximenez.
An important concern to this winery is the hygiene of the installation and building. Located at the top of a hill at the edge of Jerez de la Frontera, the important westerly winds come in from the Atlantic Ocean and with just the right amount of humidity. This climate is most important for the possible development of the yeast “Flor” and is when the fermentation process.
The vineyards are located just outside Jerez, the harvest is done by hand, and the soil is the famous chalky Albariza. The grapes are predominantly Palomino and Pedro Ximenez.
